Castlevania
Koji Igarashi, the man behind the recent Castlevania games, has mentioned that he's working on a next-gen (read: PS3) Castlevania title, which he hints will likely be thematically similar to the current-gen console Castlevanias rather than the more Metroid-style handheld Castlevanias.
Devil May Cry 4
Sword-wielding, gun-toting series protagonist Dante is back, wandering through snowy landscapes and beating up poor, defenseless cameras and generally just looking damn cool (as he's been known to do from time to time).
Final Fantasy VII Remake
When Square Enix showed off a tech demo of the opening of FFVII with improved graphics and character designs more like Advent Children, many people took this to suggest that a remake was in order. Which is indeed the case - director/producer Tetsuya Nomura admitted to 1UP that he does indeed intend to turn it into a remake (when he gets to it).
Silent Hill 5
The Silent Hill team has said that they're working on a new project for the PS3, and although they haven't specified what, it seems fairly certain that the series will hit the PS3 sooner or later, especially with the movie due out shortly.
