mmmm...mozzadillas

I feel decidedly un-goth for posting this, but then what the hey. I generally look pretty un-goth too. It is a great vegetarian recipe, and I assume there are folks here that would appreciate it. Anyway, at this year's Bonnaroo in Manchester I found heaven-in-a-food-booth: Mozzadillas. I've since tried making them at home with varying degrees of success. Basically this is just a quesadilla, so it is pretty simple to make. You just have to make sure you have everything at the ready and that the oil / butter is good and hot.

Ingredients:
Tortillas
Baby spinach
Fresh sliced and peeled tomatoes
Olive Oil
Butter
Sliced / crushed garlic
pine nuts
Fresh pesto (if possible)
Fresh sliced Mozzarella

Prepare your tortillas. Cover half the tortilla with spinach, tomato, garlic, pine nuts and sliced mozzarella. Drizzle on the pesto sauce

Heat a large skillet with enough butter / olive oil to cover the bottom.

Place the tortilla in the skillet and fold in half. Flip over after a minute or so...Should brown quickly. Press and remove to napkin or paper plate to drain. YUM!!!

Actually didn't Sonic Youth play this year? I love me some Sonic Youth.

Sonic Youth did play, and they played some fun stuff from Goo, but didn't go much further back. I went more for my interest in specialty herbs than hippie toejam band music, but it was actually a lot of fun.
