That's going to be hard. Hot and Sour Soup is one of the things that determines whether I keep going to a certain Chinese restaurant or not - the other is good pot stickers.
The only place in Knox that had adequate H&S soup for me was Mandarin House. They will kick the spice up if asked. It was not perfect, but I liked the taste overall even if I did not care for some of the ingredients in the soup.
The craptastic PF Changs has a more traditional hot and sour so far as ingrediants go, but the tast is way off, the spices are no where near up to snuff, and the price is of course, way more than you would pay for soup at any other Chinese restuarant. It looks perfect, but the taste is just not there.
An alternative that I would recommend, though pricier, would be either of the 2 house Thai soups, Tom Kha or Tom Yum, at Taste of Thai. They will make them as hot as you want, though a 3 out of 5 usually does the trick for me.

Gleason is the only one I've eaten at. They also get high marks for a very yummy and very spicey Kung Pao Beef. Their downside is average, but cheap, potstickers.
trust me Stir Fry Cafes hot and sour soup will kick your ass!! This is my favorite soup and ive tried it at all the above mentioned places and this is the only one that brings tears to my eyes. that and drains my nazel caveties.
